we have a foriegn exchange student with us, and I am afriad she is terrribly terribly homesick. She talks all the time about missing the food but we’re stumped, we dont know what to cook her. Help would be heavenly Please and Thankz!
A: Well I am not only a Canadian, I am a former chef and worked in Quebec, other than tourtiere a meat pie of sorts, poutine which is not my fav, sugar pie, cretin which is like a pate/meatloaf, pea soup, pork hocks and meatballs, they would just be happy with a smoked meat sandwich or spaghetti made with smoked meat sauce.
But anyone I have known from Quebec is use to regular Canadian foods like the rest of us enjoy, most young people would not touch the old style foods.

1 Peameal Bacon, 1 centre cut -piece
“Peameal bacon is a unique Canadian meat, pickled but unsmoked loin of pork
rolled in cornmeal. Usually it is sliced and fried for breakfast but it
excellent baked whole. The cornmeal makes a crisp exterior and the meat,
although quite lean, is particularly juicy, because of the pickling
process. For baking it is important to select a piece from the center cut, with a wide band of lean visible on both ends.”
Place in an open roasting pan, fat side up. Bake at 350F degrees for 1- 1/2 hours. Serve hot in generous slices with baked beans if desired.

6 kaiser rolls
1 tablespoon bacon — uncooked and chopped
2 tablespoons onion — chopped
2 ounces mushrooms, canned — sliced and drained
12 slices canadian bacon — cut 1/4 inch thick
6 slices provolone cheese
6 slices green pepper
dash paprika
Split rolls, save tops to accompany the open-faced sandwiches. Set aside. Combine bacon, onion, and mushrooms in a 2 cup glass measuring cup. Cook uncovered in microwave oven about 2 minutes at HIGH or until onion is tender, stir once. Arrange 2 slices of Canadian bacon on each roll and top with bacon-mushroom mixture. Top with cheese. Place 1 green pepper ring on each cheese slice; sprinkle paprika inside of ring. Place sandwiches on paper towels or roast rack. Heat uncovered in microwave oven for 4 minutes on MEDIUM or until cheese starts to melt and meat is hot. Serve

2 c Blueberries;fresh -OR- 1/4 ts -Salt
1 pk -Blueberries, 300 g 1/4 c Shortening
-individually frozen, 1 Egg;beaten
-unsweetened 1 ts Vanilla
3/4 c Sugar,granulated 2/3 c Milk
1 ts Lemon rind;grated Whipped cream -OR-
1 1/4 c Flour;all purpose Ice cream; opt
1 1/2 ts Baking powder
Pouding Renverse des Bleuets
Lemon-flavoured cake batter baked over fresh blueberries makes a perfect dessert.
Combine blueberries, 1/4 cup of the sugar and lemon rind in a buttered 8 inch square baking pan.
In a bowl, combine flour, baking powder and salt. In another bowl, cream shortening with remaining 1/2 cup sugar until fluffy. Beat in egg and vanilla. Add dry ingredients alternately with milk, blending well after each addition and finishing with dry ingredients.
Pour batter over fruit in pan and bake in a preheated 350F oven for about 40 minutes, or until a tester inserted in centre comes out clean. Let cool slightly; turn out onto serving plate. Cut in squares and serve warm or at room temperature, with whipped or ice cream, if desired. SERVES: 6-8

Q: Any good recipes or ideas using Canadian Bacon and/or Lil Smokies?
Well, my boyfriend bought Canadian Bacon and Lil Smokies to make Stromboli, but the dough went bad before we got a chance. Any good recipes or ideas besides your simple pizza, flat bread, stromboli, calzones, etc? I was thinking about baking them with brown sugar, but that’s so boring. Ideas?
A: Canadian bacon, litely fried or grilled make a good sandwich with melted cheese. Lil smokies heated in a cranberry sauce or grape jelly.

A: I am a former chef and from Canada, I know a number of First Nations chef and worked with one when with CP hotels, you are thinking of soapberries, they make a frothy when crushed and whisked.
We had festivals and made things like wild rice pancake, cattail soups, pemmican, smoked our own fish, made stone soup and the 7 sisters soup with the white corn, we also did meat dishes, wild duck, goose (not Canada), moose,bison and rabbit.

2 lb Boneless chicken meat
2 lb Lean beef
2 lb Lean pork
4 md Onions, coarsely chopped
1/4 lb Salt pork, thinly sliced
2 c Potatoes, peeled and cubed
1 ts Salt
1/2 ts Ground black pepper
1/4 ts Mixed ground cloves, nutmeg,
-cinnamon, allspice
2 c Chicken stock (approximate)
Traditionally this layered pie is best made with game.
Failing a supply of venison or pheasant it can be made
with a mixture of meats and poultry as is this recipe.
Servings: 8 to 10
Pastry for double crust pie Cut chicken, beef and pork
into 1 inch cubes and place in a large bowl. Combine
with onions; cover and refrigerate for at least 12
hours or overnight.
Arrange salt pork evenly in the bottom of a 3 quart
casserole, preferably cast iron with a cover. Layer
with 1/3 of the meat mixture and 1/3 of the potatoes;
season with 1/3 of salt, pepper and spices. Roll out
half of the pastry slightly thicker than for a normal
pie and arrange on the potato layer, cutting a small
hole in the centre. Repeat with 2 more layers of meat
and potatoes seasoned with salt, pepper and spices.
Cover with remaining pastry, cutting a small hole in
the centre.
Slowly add enough chicken stock through the hole until
liquid appears. Cover dish and bake in a preheated 400
deg F oven for 45 minutes or until liquid simmers.
Reduce temperature to 250 deg F and continue to bake,
covered, for 5 to 6 hours more or until top crust is a
rich golden brown.

1/2 lb Ground pork
1/2 lb Ground veal
1/3 c Chopped onion
1/3 c Water
1/4 ts White pepper
1 ts Salt
1/4 ts Ground cloves
1/4 ts Cinnamon
1/4 ts Celery salt
1/4 ts Savory
1 To 2 potatoes,boiled and
-mashed
1 Pastry for 8″ double-crust
-pie
Preheat oven to 425øF. Place pork, veal, onion and
water in a saucepan. Simmer until color changes.
Adding seasonings; simmer for a little longer.
Thoroughly drain meat. Mix in mashed potatoes. Fit
bottom pastry into 8″ pie plate. Fill with meat
mixture. cover with top crust. Seal edges as desired
and vent top to allow steam to escape. Bake for 10
minutes; lower oven temperature to 400øF and bake for
20 to 25 minutes or until crust is golden brown and
filling is hot. Serves 6 Note: If you prefer a
spicier tourtiere increase seasonings to your taste.

i need some recipes no achohol! i need them to be really simple and preferably not using the oven and under an 1 hours tops for cooking

A: I can’t think of anything other than poutine that fits your requirements.

If you want to use a dessrts, there is always tarte au sucre, or sugar pie. http://allrecipes.com/Recipe/Quebec-City-Sugar-Pie-with-Thick-Cream/Detail.aspx but you’d have to use the oven for that.

Or, you can serve boxed mac and cheese with ketchup mixed in.

RASPBERRY JELLO DESSERT
1 (10 oz.) pkg. frozen raspberries
1 (6 oz.) pkg. raspberry Jello
1 c. boiling water
1 c. applesauce
1 c. sour cream
2 c. miniature marshmallows
Thaw raspberries. Dissolve Jello in water; stir in raspberries and applesauce. Pour into 8 x 8 pan. Let Jello set. Mix marshmallows and sour cream together. Spread marshmallow mixture over the Jello. Allow to set in refrigerator several hours.

Bruti Ma Buoni (Ugly but Good) By The Canadian Living Test Kitchen
Servings: 24
Ingredients:
4 egg whites
1 cup (250 mL) granulated sugar
3 tbsp (50 mL) all-purpose flour
1 tsp (5 mL) vanilla
2 cups (500 mL) coarsely chopped Toblerone chocolate
2 tbsp (25 mL) icing sugar
Preparation:
Preheat oven to 350°F (180°C).
Line 2 rimless baking sheets with parchment paper or foil; grease foil. Set aside.
In large heatproof bowl over pot of gently simmering water, cook egg whites with sugar, whisking occasionally, for about 10 minutes or until opaque. Remove from heat. With electric mixer, beat for about 7 minutes or until cool, thick and glossy. Fold in flour and vanilla; fold in chocolate.
Drop by heaping tablespoons (15 mL) onto prepared pans. Bake in top and bottom thirds of oven for 25 to 30 minutes or until light brown, rotating and switching pans halfway through. Let cool on racks. Sprinkle with icing sugar. (Make-ahead: Store in airtight container for up to 3 days.)
